- 1/2 pint blackberries
- 1/4 cup blackberry preserves
- 3/4 cup cream, whipped
- 2 cups vanilla pudding
- Garnish (optional): mint sprigs
- Puree half the berries, sieve.
- Sieve preserves into puree.
- Fold half of cream into pudding, spoon into four bowls.
- Swirl 2 tsp puree into each.
- Freeze one hour.
- Top with remaining cream, puree, berries.
