Julio's Hot Carrots
- 1 gallon fresh carrots, sliced at an angle.
- 1 12 or 13 ounce can Jalapenos, with juice
- 2 sliced onions
- 2 tablespoons oil
- 1 coffee cup of vinegar
- Salt and pepper to taste
- Cook carrots to desired tenderness and drain well.
- Add to remaining ingredients. Mix well.
- Chill at least 3 hours.
The flavor reaches its peak when throughly chilled. The amount of Jalapenos can be adjusted for the desired amount of hotness.
