Blackberry Fool

1/2 pint blackberries
1/4 cup blackberry preserves
3/4 cup cream, whipped
2 cups vanilla pudding
Garnish (optional): mint sprigs

  1. Puree half the berries, sieve.
  2. Sieve preserves into puree.
  3. Fold half of cream into pudding, spoon into four bowls.
  4. Swirl 2 tsp puree into each.
  5. Freeze one hour.
  6. Top with remaining cream, puree, berries.
  7. Garnish.
