Apple Macadamia-Walnut Loaf
- 1 1/2 cups enriched flour, sifted
- 2 tsp. baking powder
- 1/2 tsp. baking soda
- 1 tsp. salt
- 1 tsp. cinnamon
- 1 tsp. nutmeg
- 1/8 tsp. allspice
- 1 1/2 cups crushed wheat cereal flakes
- 1/2 cup walnut, chopped.
- 1 cup macadamia nuts
- 3/4 cup chopped apple
- 1 egg, slightly beaten
- 3/4 cup brown sugar, firmly packed.
- 1 1/2 cups butter milk
- 2 tbs. melted shortening
- In a large bowl, mix together flour, baking powder, baking soda, salt, cinnamon, nutmeg and allspice.
- Add wheat cereal flakes, walnut, macadamia nuts and apple.
- In a small bowl, combine egg, brown sugar, butter milk and shortening. Fold into dry ingredients, so batter is moist. Do not beat.
- Pour into greased loaf pan. Bake at 350 degrees for one hour.
